White tea is made from immature tea leaves that are picked shortly before the buds have fully opened. The tea takes its name from the silver fuzz that still covers the buds, which turns white when the tea is dried. The exact proportion of buds to leaves varies depending on the variety of white tea. For example, White Peony contains one bud for every two leaves, while Silver Needles,  is made entirely from downy buds picked within a two day period in early Spring.

To get full benefits of white tea, remember that freshness is important. Keep your tea container sealed and in a cool dark place. Water temperature requirements vary depending on the tea variety you are trying, as do the recommended steep times.  The White tea needs a lower water temperature for optimum flavor. Brewing water should be just shy of the boiling point, in the 185 to 190 Degree range. Steep one tablespoon of tea in eight ounces of water for three to five minutes.

White Tea Caffeine

White tea often contains buds and young tea leaves, which have been found to contain lower levels of caffeine than older leaves, suggesting that the caffeine content of some white teas may be slightly lower than that of green teas.   Caffeine levels of White Tea are about 15 mg per serving, compared to 40 mg in Black Tea, and 20 mg in Green Tea.

Caffeine in itself does not have any specific health benefits, but rather acts as a diuretic and a stimulant to the nervous system. As most coffee drinkers and tea lovers know, caffeine can temporarily reduce drowsiness and promote alertness.     Because of the low caffeine content in white tea, those who drink the tasty brew often report that the tea gives them a calming sensation.
